Tips for keeping fries crispy

1.  Soak in ice water 2.  Use parchment paper 3.  Cut the parsnip into thin sticks 4.  Oil generously 5.  Do not crowd on the sheet pan 6.  Bake in a hot oven

Cut parsnips into sticks that are roughly 4-inches long and 1/4-inch thick. 

Prep:

step 1

Preheat oven to 425ºF. Place parsnip sticks on 2 baking sheets. Drizzle with olive oil season with salt and pepper. Toss to coat; spread the pieces in a single layer.

step 2

Bake until tender and golden, about 25 minutes (no need to flip). Sprinkle with additional salt, if needed.

Garnish with fresh chopped parsley, and serve with dipping sauces, if desired.
