step 1

Boil water in a medium saucepan. Lower to a simmer then carefully add the eggs. Turn heat back to medium high and cook eggs for 11 minutes.

Prepare an ice bath. Transfer eggs to the prepared ice bath and let sit in ice bath until completely cooled, about 8-10 minutes.

Peel the eggs and use a knife to roughly chop on a cutting board.

In a medium bowl, mix together mayo, mustard, capers, pickle juice, 1/4 tsp salt and black pepper. Mix in chopped eggs, celery, scallion, and dill.

Toss gently to combine. Taste and add a little more salt and pepper, if needed. Chill until ready to use.
