Ingredients

step 1

Place cubed bread on a baking sheet. Toss with olive oil and bake, flipping halfway through, for 15 minutes, or until croutons are  golden brown and crisp.

Place kale in a large bowl. Drizzle with olive oil and use your hands to massage it until kale is darker and soft.

Add the romaine to the massaged kale and toss to mix.

Drizzle with desired amount of dressing (I use about half) and toss again to coat all the leaves.

Transfer dressed kale and romaine to a serving bowl or deep platter. Top with avocado, croutons and Parmesan. Drizzle with a bit more dressing.

To get ahead, prepare all the components in advance and assemble salad when ready to serve.
