Don't let the long-ish list of ingredients put you off. Aside from a fair bit of chopping, there are relatively few steps, all straightforward and easy to execute.
Ingredients
For the Burger:
1poundground chicken
2garlic clovesfinely minced
2shallotsfinely minced
1/2cupchopped cilantro
2teaspoonsfish sauceoptional, but delicious
1teaspoonred chili flakesor less to taste
1/2teaspoonKosher saltor 1 teaspoon if omitting fish sauce
1/2teaspoonfreshly cracked pepper
2Tablespoonsneutral oillike avocado or grapeseed
For the Dressing:
1large shallotfinely sliced or minced
1teaspoongarlicfinely minced
1teaspoonfresh gingerfinely minced
1/4cuplime juice
1Tablespoonrice vinegar
2teaspoonslight soy sauce
2Tablespoonsfish sauceoptional, but delicious
1Tablespoonraw honey
1teaspoonsesame oil
a few dashes hot sauce
For the Cashews:
1/2cupcashews
1teaspooncoconut oil
1/4teaspoonsalt
1/8teaspooncayenne pepper or to taste
For the Salad:
1/2head Napa cabbageshredded
1/2head red cabbageshredded
4large bok choyrough bottoms cut and discarded
2large carrotspeeled and cut into matchsticks
1jalapeƱoseeded and sliced
2scallionsthinly sliced
Chopped cilantro to taste
Instructions
For the Burger:
In a medium bowl, mix the ground chicken with all the other ingredients. Do not over mix.
Form mixture into 4 patties, about 5 inches in diameter.
Heat a grill or grill pan to medium heat.
Brush the grill or grill pan with the oil.
Cook the patties for 7-8 minutes on one side (without moving them) then flip and cook for another 4-5 minutes, or until cooked through.
For the Dressing:
Combine all ingredients in a blender and mix until smooth. Alternatively, whisk all ingredients in a small bowl.
For the Cashews:
Heat a small saucepan to medium and lightly toast the cashews until golden brown. Add the coconut oil, cayenne, and salt. Toss for a few seconds then set aside.
For the Salad:
Toss all the salad ingredients in a large bowl. If making ahead, cover and refrigerate until ready to use.
Add enough dressing to coat salad and top with cashews.
