Ingredients

In a large bowl, whisk the dry ingredients. In a separate bowl, whisk the wet ingredients.

Add the wet ingredients to the flour mixture. Use a wooden spoon or spatula to stir the mixture until well combined.

Using lightly floured hands, bring the dough together. The dough should be sticky but manageable. Divide dough into two equal pieces.

Form into two separate logs and transfer to a large baking sheet spacing them 3-inches apart. Wet your hands and smooth out the tops. Dust with icing sugar, if using.

Bake for 25-30 minutes or until logs are lightly golden brown. Place baking sheet in a cool spot and allow the logs to cool for 12 to 15 minutes.

Using a sharp serrated knife, slice each log into 3/4-inch pieces. For larger biscotti, slice the logs in diagonal slices, for smaller biscotti, slice them straight across.

Place  biscotti standing upright on baking sheet, spacing them about 1-inch apart. Return to the oven and bake for 10 to 12 minutes.

Transfer biscotti to a wire rack and cool completely
