Ingredients
1 1/2poundsfontina cheeserind removed and 1-inch diced
2Tablespoonsextra-virgin olive oil
6cloves garlicminced, or thinly sliced
1Tablespoonchopped fresh thymeminced
1 Tablespoonchopped fresh rosemary
1/2teaspoonsaltor a pinch more to taste
freshly ground black pepperto taste
2 TablespoonsHot honey(*see notes to make your own)
1Crusty French Baguettesliced, for serving
Instructions
Place an oven rack approximatley 5 inches from the heat. Preheat the broiler on high.
Assemble the Fontina cheese cubes in the bottom of a 8 or 9-inch cast-iron pan.
Drizzle the fontina with olive oil and scatter with the minced garlic, thyme, and rosemary. Season with salt and pepper.
Broil until the cheese is melted, bubbly, and slightly golden, 6 to 7 minutes.
Drizzle hot honey over the melted cheese and serve immediately with crusty bread.

InstructionsGently heat honey in a small saucepan over low heat for about 2 to 3 minutes. Stir in chili flakes and salt. Heat for 1 minute longer then remove from heat. To store, let sit for about 30 minutes. Transfer to a small jar, cover, and store in refrigerator for up to 3 months.
