Tasty fresh tomatoes are almost here. Can’t. Wait. Highlighted on my instagram stories I have a quick video for pico de gallo which I make at least a dozen times when the tomatoes are at their peak. While we wait patiently for tomatoes to continue getting sun-kissed and perfectly ripe, I thought it would be fun to use strawberries in the pico.
It may sound strange to use a sweet fruit for a savoury dish, but think mango or pineapple salsas. Same thing here. I promise, the exciting contrasting flavours in this fresh strawberry salsa — sharp red onions, earthy cilantro, spicy jalapeño, briny salty lime, and candy sweet strawberries — are incredibly irresistible.
TIPS FOR MAKING FRESH STRAWBERRY SALSA
- This is not a make-ahead salsa — the strawberries in the salsa start to get mushy in less than 1 hour. If you like, you can have all the other ingredients chopped and mixed in a bowl, then add the chopped berries a few minutes before serving.
- If your strawberries are not very sweet, add a little drizzle of honey or maple syrup.
- Probably goes without saying but hand chopping is the only way to go for a fresh salsa. Blending, or processing, the ingredients would make a sauce, not a salsa.
WHAT TO EAT WITH FRESH STRAWBERRY SALSA
Essentially you can treat this strawberry salsa as you would a tomato salsa. Enjoy it as an appetizer with chips, tortilla chips, jicama slices (my fave!), sliced cucumber, etc. However, here a few more wonderful ideas to use your salsa:
- For an irresistible snack or appetizer, spread creamy ricotta cheese on toasted crusty bread and top with the strawberry salsa. Simple. Delicious.
- Pizza or flat bread topped with buffalo mozzarella and strawberry salsa? Yes please.
- Here is a wild idea – top your burger with this salsa. SO good.
- Top any mild grilled fish with the salsa, such as cod or halibut. Absolutely divine.
This salsa is healthy, nutritious, and delicious and perfect for this weekend. No doubt you have been eyeing all the gorgeous strawberries right now. Grab some, make this salsa, and enjoy!
